I've finally discovered the world of chia seeds. I bought them a while ago and I don't remember why, but they never got used. Well Ani made a trip to Long Beach the other day and she mentioned chia pudding. So I had to ask... how great is this, chia seeds with some water ( I used fresh almond mylk that I just made) and some sweetener. Ani said use steevia but only had agave at home. dude it was so good! The chia seeds get all gelatinous in just seconds! it was freaking awesome. I ate all my chia seeds in 2 days and I can't wait to experiment. maybe adding nuts and berries. how about cinnamon or banana?

AND this solves the mystery of my crazy messed up fruit smoothie I had a while back. I made a normal everyday smoothie with juice, nuts, fruit, and the usual. But one day it totally solidified into a sponge! I was totally freaked out. I must have added chia and not known what to expect!

One of my New Year's Resolutions for 2010 was to keep my car and driving record completely legit. Well it took until July 19th, but I know have my license back. Laura brought me a hommade arrangement last night of some painted kale! how great is that! The weird thing is I was looking in my truck for my registration this morning so I can keep it with my insurance card and found a ticket receipt for something I NEVER EVER saw before. In 2008 someone got a ticket in my truck for violating a toll in Mission Viejo! I know it wasn't me, that's for sure. Ran out of the house today without my normal super giant healthy breakfast smoothie of whatever fruits and veggies I have on hand. I feel like crap and hope to go home for a lunch break so I can catch up.
