(not) tuna salad on a bagel

Here's a raw vegan bagel recipse I found on www.fromsadtoraw.com. It was my first experience sprouting and it turned out great.
1 cup of one day sprouted kamut grains. sprout and dehydrate 8-10 hours.
1 cup almond flour. I soaked and dried my almonds and used the coffee grinder.
3 tablespoons of ground flax
1 cup coconut water
1 tablespoon of fresh coconut meat.
1 tablespoon of agave
1 teaspoon olive oil
1 teaspoon sea salt
it all goes in the food processor. make into dough.
put in a non metal bowl and cover. place in the fridge for an hour.
The recipe suggests shaping into bagels but I just used the square cookie cutter my ex girlfriend bought me and made bread slices. She wanted me to make things in heart shapes so she got me a little kit which actually worked out pretty good. Add toppings. I used sesame on some, sea salt on some, and some home-made parmesean cheeze made of walnuts, yeast, and sea salt. you can also use garlic and onion or whatever.
Dehydrate until it's a texture you like.

1/2 cup soaked sunflower seeds.
1/4 cup soaked almonds
2 tablespoons water
1 1/2 tablespoon minced celery
1 tablespoon minced onion
1 tablespoon minced fresh parsley
1 tablespoon lemon juice
1/4 teaspoon sea salt
The original recipe says to process the sunflower seeds and almonds in the food processor to a paste, then mix in the rest. I completely dried my seeds and nuts after soaking and ground them into a flour in the coffee grinder. So I ended up putting all the ingredients in the food processor at once and used a little extra water. Also, I had a ton of parsley left over so It's all in my dehydrator now. I'll grind it up and store it to use as a seasoning. I also used a little less celery cuase I hate the stuff so much. But I sliced this stuff up so small it was barely there and really was necessary for the final product to be great, and it really was. in the picture above there's a bite taken out of it because I wanted to eat it so bad I forgot to take the pic.



The rest of the lemon I didn't use went into some fresh OJ. the cookies in the picture are a combo of dates, cacao nibs, and almond powder left over from making "chocolate milk." Almonds are expensive and i never let that stuff go to waste. The chocoalte milk was home-made almond flour with cacao powder and agave nectar and water. once I filtered out the pulp I added it to dates and cacao nibs and dehydrated for the day. these are so good you wouldn't believe it.
