Went to Animal Acres in Acton to take a raw food class from the amazing Ani Phyo.  She made a chocolate shake, Chocolate cake, pecan cookies, and tart thingies.  Her new book is a dessert recipe book.  You can get it at www.aniphyo.com or any bookstore.  Animal Acres is an animal sanctuary (in Acton, Ca, just outside Los Angeles)for farmed animals who never made it to slaughter. 

For an awesome cashew "milk" blend 1 cup of cashews with a few cups of filtered water.  add some dates or agave syrup to sweeten and some vanilla extract if you want.  blend really well and strain.  I do an extra filtering with a cheesecloth.  You should have a nice creamy cashew drink.  in the picture I added some rasberries and pineapple to what little was left of my last batch of cashew milk.  Then I opened a young coconut and added the milk.  Blended it all together and strained it. I drank this while I sat in L.A. traffic on my way to Animal Acres.


I had a great time talking to Ani Phyo at Animal Acres (www.animalacres.org) and she made a salad at the end and said I don't eat enough greens so I made a salad today.  She made a killer dressing using a couple tablespoons of mustard and agave nectar, and a tablespoon of balsamic vinegar.  I put some on my greens below with some sunflower seeds and pine nuts.  The leftover dressing went into the empty raw agave bottle and into my refridgerator.
