This calls for a dehydrator. get a good one if you haven't already. I know the attached picture isn't very flattering, but this is one of the raddest things I've made from Ani's Raw Kitchen. This little recipe is hidden on page 139 and deserves more attention. After a couple of weeks of getting not so great young coconuts from the store, I finally found some really really good ones. Luckily I found this coconut jerky recipe. if you need help opening a young coconut you can obviously message me, but there's a ton of videos on youtube that can help. in any case, scrape out as much of the meat as you can. coat it with a couple teaspoons of nama shoyu (raw soy sauce) and olive oil. dehydrate until it kicks ass.
