You'll need to have a dehydrator for this.  I love mine and use it all the time.  This is an idea I wrote down from someone's blog I was on, don't remember who or where.  I'm not a huge fan of eggplant and these take some getting used to, but if you like eggplant than this is for you.  The first time I did this I wanted to try the fance slicing blade on my food processor for the first time so I made very thin eggplant slices.  It's better making slices about 1/4" or so thick.  Once dehydrated you lose a lot of size, so the thin pieces became too thin really.  so I dehydrate them several hours, until dry and crispy.  then, soak them in a mixture of 1 cup water and 1 teaspoon apple-cider vinegar.  Next I put them back in the dehydrator and sprinkled them with sea salt and chili powder and any other seasoning I want and dehydrate them again until crispy.  They're definitely tasty, I'm just not that much into eggplant.  Come visit and I'll share them with you.
